Extra virgin olive oil is often called a “fat,” but in reality it’s something much more special: 100% fresh fruit juice. When olives are harvested and crushed within hours, and their juice is extracted only by mechanical means, you get an oil that is closer to a living food than a processed ingredient.
At Borgo Naera, this is exactly what we bottle: early-harvest olives from our Sicilian grove, milled quickly and without heat or chemicals. The result is a vibrant, green-gold juice that carries not just flavour, but a dense concentration of bioactive compounds that modern science is only beginning to fully understand.
What makes extra virgin olive oil different from other oils?
Most edible oils go through refining: high temperatures, chemical solvents, bleaching and deodorising that strip out aroma, flavour and many natural antioxidants. Extra virgin olive oil is different. By law in the EU, it must be obtained only by mechanical processes at controlled temperatures, without any chemical refining.
This gentle extraction preserves:
• Monounsaturated fats (mostly oleic acid), which are cardioprotective when they replace saturated fats in the diet.
• Vitamin E and other minor components that help protect cells from oxidative stress.
• Polyphenols, the family of plant molecules that give high-quality EVOO its peppery, bitter, intensely green character, and much of its health power.
In simple terms: refined oils behave like neutral calories. True extra virgin olive oil behaves like a functional food.
Polyphenols: the microscopic guardians in the bottle
Polyphenols are a large family of plant compounds with antioxidant and signaling roles in the body. In olive oil, there are roughly two dozen key phenolic compounds, including oleocanthal, oleuropein derivatives and hydroxytyrosol.
They are responsible for:
• The aroma of fresh herbs, tomato leaf, artichoke or almonds you smell in good EVOO.
• The bitterness on the tongue and the peppery tickle at the back of the throat when you swallow, especially noticeable in young, early-harvest oils.
• A range of biological effects: protecting blood lipids from oxidative damage, modulating inflammation, and supporting vascular and metabolic health.
So if an olive oil tastes flat, greasy and “easy” with no pepper or bitterness, it’s usually low in polyphenols, and lower in the compounds most associated with health benefits.
The EU health claim: when is an olive oil officially “high in polyphenols”?
The European Union recognises one special property of olive oil in its official regulation: olive oil polyphenols help protect blood lipids from oxidative stress.
To carry this health claim, an olive oil must contain at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil, which corresponds to around 250 mg/kg of total phenolics.
Polyphenols naturally decline over time – often by around 30–40% over a year depending on storage. Starting from a high level at harvest means the oil stays above the beneficial threshold for longer.
Where does Borgo Naera stand?
Our latest harvest analyses show polyphenol levels in the range of 289–400 mg/kg at bottling, comfortably above the EU benchmark for the health claim.
This means:
• Even months after bottling, our oil still provides enough phenolic compounds to qualify as protective for blood lipids (assuming normal consumption).
• Our olive oil has a noticeable peppery finish and structured bitterness – sensory markers of phenolic richness, not defects.
How much extra virgin olive oil should you eat?
Studies on Mediterranean dietary patterns consistently associate regular consumption of extra virgin olive oil with lower rates of cardiovascular events, certain cancers, type 2 diabetes and overall mortality.
Some key signals from research:
• In large trials such as PREDIMED, participants consuming around 4 tablespoons (50 g) per day had roughly a 30% reduction in major cardiovascular events.
• Observational studies show that even ½–2 tablespoons per day of olive oil, when it replaces less healthy fats, is associated with lower risk of heart disease, stroke and premature death.
For everyday life, a practical target range is:
• 2–4 tablespoons (20–40 ml) per day
• Used instead of butter, margarine or refined oils – not simply added on top of an already high-fat diet
This mirrors traditional Mediterranean intake and is a realistic way to get clinically relevant amounts of phenolic compounds without obsessing over grams.
How to recognise (and enjoy) a high-polyphenol oil
You don’t need a lab to glimpse what’s happening in your bottle. A simple tasting routine reveals a lot:

Warm it gently in your hand and take a deep sniff. Fresh EVOO should evoke green plants, herbs, tomato vine, artichoke, almond, fresh grass.

Sip and hold it briefly in your mouth, then swallow.
You should notice:
• A pleasant bitterness on the tongue.
• A peppery, stinging sensation in the back of the throat, often making you want to cough once or twice.
That “sting” is strongly linked to oleocanthal, a natural phenolic compound.
In the kitchen, use high-polyphenol EVOO:
• Generously raw: over salads, cooked vegetables, soups, grilled fish, legumes, whole grains.
• Warm, but not burnt: EVOO is more heat-stable than many people think thanks to its antioxidants and high proportion of monounsaturated fats, but very high temperatures will gradually degrade phenolics.
